Decades of Experience

Since 1924, the Taylor family has crafted the finest local sausage. It all started with great grandpa Taylor who came from Europe with his own recipes. His journey began in Alberta, Canada and eventually took him to California. His son (grandpa Taylor) learned the family trade and took the business to the famous Hollywood Farmers Market in 1934. 

After a brief pause because of World War II, grandpa Taylor opened a San Francisco store located in the Crystal Palace Market. Other sausage kitchens were added in Oakland and Hayward, which is where the third-generation Taylor began his journey in the business.

Charles Taylor completed a Bachelors of Science degree with an emphasis on the meat sciences from Cal Poly at San Luis Obispo. After spending 10 years in the Oakland store, in 1970 his family moved to the Illinois Valley in Southern Oregon.

His two sons now continue the sausage-making tradition with their dad and own children here in Cave Junction. This family business has been creating the finest sausage for nearly 100 years and is a staple of the Southern Oregon food community.
